1 red capsicum, cut into diamond shape
1 green capsicum, cut into diamond shape
1 yellow capsicum, cut into diamond shape
1 Lushious tomato, sliced
1 Lushious cucumber, roughly sliced
2 whole chicken thighs, cleand, deboned and cut into slices
200g ready to use deep-frying flour batter
Cooking oil for deep-frying
For the Sauce:
120ml tomato sauce
120ml chili sauce
30ml vinegar
250ml chicken stock
1 tsp cornflour diluted in 3 tbsp water
Method
- Heat oil in a saucepan until very hot.
- Evenly coat chicken slices with flour.
- Deep-fry the chicken slices until golden brown; keep aside until ready to use.
- Meanwhile, put all the sauce ingredients into a saucepan and cook until slightly thickened, add in all the vegetables and fried chicken slices. Allow the ingredients to combine well, dish out and serve hot with rice.
