Summer Minted Rock Melon Soup with Lushious Red Chili

1/2 tsp Lushious red chili

200g rock melon

100ml orange juice

1 tsp lemon juice

1 tbsp sugar syrup

pinch of salt

pinch of cinnamon powder

fresh mint leaves for garnish

 

Method

  1. Deseed, peel and cut rock melon into cubes. Blend it with the red chili, lemon juice, sugar syrup and orange juice.
  2. Add in a pinch of salt and cinnamon powder.
  3. Let it chill for at least an hour.
  4. Garnish with fresh mint leaves and serve chilled.
