Pan Fried Pomfret with Lushious Tomato Sauce

2 medium sized white pomfrets, gutted and cleaned

1 tsp salt

1 tsp pepper

1 tsp ikan bilis seasoning

100g cornflour

cooking oil for deep-frying

 

For the Sauce

4 Lushious tomatoes, seeded and diced

1 red onion, diced

4 tbsp tomato sauce

1/2 tbsp ikan bilis stock concentrate

1tbsp brown sugar

A handful of sliced Lushious capsicums

 

Method

  1. Rub salt, pepper and ikan bilis seasoning all over the fishes.
  2. Heat up oil and coat the pomfrets evenly with cornflour.
  3. Deep-fry the pomfrets until cooked, pat dry and jplace on a bed of lettuce leaves.
  4. To make the sauce - add all ingredients for the sauce into a saucepan and cook over  medium heat. Dish out and pour over pomfrets.
