1 red onion, diced
3 cloves garlic, diced
1 red capsicum, diced
1 yellow capsicum, diced
1 green capsicum, diced
4 white button mushrooms, diced
100g chicken breast, diced
50ml tomato puree
1 tbsp chicken stock concentrate
1 tsp dried oregano
1 tsp dried basil
Pinch of salt and pepper
2 Lushious romaine lettuce, leaves individually picked
1 tbsp cooking oil
In a pan, heat up cooking oil and add in diced onions and garlic, sauté until fragrant.
Add in the rest of the diced vegetables, and sauté for another 10 minutes until softened, add in chicken meat, tomato puree, chicken stock and allow liquid to reduce slightly. Lastly add in dried herbs and seasoning.
Use the leaves from the romaine lettuse as base for the braised vegetables.
