8 pieces chiken fillet
2 tbsp lemongrass, chopped
1 tbsp kaffir lime leaves, chopped
1/4 tsp salt
pinch of black pepper
2 tbsp vegetable oil
Salad:
1 Lushious cucumber, seeded and thilny sliced
3 shallots, thinly sliced
1 tbsp spring onion, shredded
2 tbsp lime juice
1/2 tsp sugar
pinch of salt
pinch of black pepper
Method
- Marinate chicken fillet with chopped lemongrass, kaffir lime leaves, salt & pepper. Heat oil in a frying pan and sear the chicken fillet on both sides. Slice each fillet into 3-4 pieces.
- Mix cucumber, shallots and spring onion with lime juice, sugar, salt and pepper. Serve salad on a plate and arrange lemongrass chicken on top.
