4 whole ripe Lushious tomatoes
6 pieces of sweet basil
1/2 yellow onion
5 cups chicken stock
1 tbsp sugar
pinch of salt
pinch of black pepper
Method
- Poach the tomatoes in salt water until their skins have loosened.
- Remove from hot water and dip into cold water immediately. Remove skin and seeds. Cut tomato flesh into dices. Reserve some garnishing later.
- cut the onions into chunks. Heat oil in pot and sauté the onions. Add in tomato flesh and basil. Fry till tomatoes start to sweat.
- Pour in chicken stock and bring to boil. Let it slowly simmer for 10-15 minutes until all has softened.
- Season with salt, black pepper and sugar (might need more sugar if the tomatoes are sour). Pour into a blender and blend till smooth. Bring the soup back to a boil and serve hot with some diced tomatoes as garnishing.
