200g lamb meat, cut into chunks
1/2 green capsicum, cut into 1 inch x 1 inch
1/2 yellow capsicum, cut into 1 inch x 1 inch
1/2 red capsicum, cut into 1 inch x 1 inch
1 Lushious tomato, cut into chunks
1/2 red onion, thickly chopped
5 cloves garlic, slightly crushed
1/2 tsp white peppercorns
Pinch of salt and pepper
3 cups water
1 tbsp cold butter
2 tbsp cooking oil
Heat a deep pot with some oil and sauté onions and peppercorns till fragrant. Then add in garlic and continue to stir fry.
Once garlic is softened, add in lamb meat and tomatoes.
Cook till tomatoes sweat and then add in water. Bring to boil and allow to simmer for 15 minutes over low fire.
Toss in the green, yellow and red capsicums and cook for another 20 minutes.
Once the capsicums have softened, seaosn with salt and pepper and stir in the cold butter. Mix well, then remove from fire and serve.
