200g lamb meat, cut into chunks
1/2 green capsicum, cut into 1 inch x 1 inch
1/2 yellow capsicum, cut into 1 inch x 1 inch
1/2 red capsicum, cut into 1 inch x 1 inch
1 Lushious tomato, cut into chunks
1/2 red onion, thickly chopped
5 cloves garlic, slightly crushed
1/2 tsp white peppercorns
Pinch of salt and pepper
3 cups water
1 tbsp cold butter
2 tbsp cooking oil
Method
- Heat a deep pot with some oil and sauté onions and peppercorns till fragrant. Then add in garlic and continue to stir fry.
- Once garlic is softened, add in lamb meat and tomatoes.
- Cook till tomatoes sweat and then add in water. Bring to boil and allow to simmer for 15 minutes over low fire.
- Toss in the green, yellow and red capsicums and cook for another 20 minutes.
- Once the capsicums have softened, seaosn with salt and pepper and stir in the cold butter. Mix well, then remove from fire and serve.
